Holiday Cakes

Christmas Pies

Pies are great for a family feast, but so much work to make! These mini pie cupcakes are a great way to fool your friends and family and very simple to make.

















What you need:

- Cupcake liners
- Yellow cake mix
- 1/4 cup vegetable oil
- 1/4 cup sour cream
- 1 can (12oz) evaporated milk
- 2 cups shredded carrots
- 2 tablespoons ground cinnamon
- Icing (recipe can be found here)
- Candy coated chocolates (M&Ms)
- Ziploc Baggie
- Brown icing gel (or food coloring)

Method:


Step 1: Combine the cake mix, oil, sour cream, and milk in a large bowl and whisk at a medium/high speed until the mixture is light and fluffy. Slowly add the cinnamon and carrots in as it is mixing until its evenly spread in the mixture.


Step 2: Scoop the cake mixture into cupcake trays lined with the cupcake liners. (Click here for tips and tricks) Bake for 15-20 min (until lightly browned).


Step 3: Separate the icing into two bowls. Color one bowl light brown and leave the other white. 
Step 4: Frost all the cupcakes with a layer of white frosting. 
Step 5: Decorate the cupcakes with similar colored chocolates. Try to cover as much of the cupcake as you can without overlapping. (If the candy has writing on it, make sure to place them face down on the cupcakes)


Step 6: Place the brown frosting in a Ziploc baggie and cut a 1/16 inch hole in one of the corners. 
Step 7: Pipe crisscrosses on the cupcake like a traditional pie would look like. Then carefully border the cupcake with tiny squiggles. 


Step 8: Serve and watch your friends and family be amazed!
