Percy Jackson cupcakes

Mrs. Jackson's specialty blue cupcakes:













Materials:
  • Betty Crocker® Party Rainbow Chip cake mix (or any cake mix .. preferably not chocolate as it will be colored later)
  • 12oz Milk
  • 1/2 cup Vegetable Oil
  • food color
  • Frostin' Pride ready to whip icing and filling
  • baking cups
  • electric hand mixer
  • Wilton® tip 1M 
  • Wilton® sprinkles white sugar pearls
  •  pastry bag

Procedure:

Step 1: Pour the cake mix, milk and oil into a mixer and using the paddle attachement, mix for 5-7 min at a medium-high speed. Let it set for 5 min and mix again for 2 min.

Step 2: Add a few drops of blue food coloring to the batter until it turns a light blue color.

Step 3: Line a cupcake tray with baking cups and using an ice-cream scoop, pour a scoop of batter into each cup. Bake at 350 ̊ F for 20-25min (some ovens may take more or less time).


Step 4: While the cupcakes are baking, mix your icing. Follow the directions on the Frostin' Pride package to whip your frosting together using your hand mixer.




Step 5: After your cupcakes are out of the oven and cooled for atleast 30 min, scoop the frosting into a pastry bag and using tip 1M, create a large swirl on your cupcake. (trick is to start from the outside and spiral in to create a peak)

Step 6: Grab a handful of Wilton® sprinkles white sugar pearls and gently sprinkle them on top of the cupcake.

    

Step 7: Grab a couple of Percy Jackson fans and enjoy!
